White Chocolate Raspberry Muffins

 These muffins are amazing!  You know that moment when you taste something and you close your eyes and sigh because of the delight of it all?  Well imagine that sensation while tasting these amazing treats!

I was flipping through my "homemade" cookbook, which is actually a binder with a bunch of handwritten recipes in it, and found this recipe.  I'm so glad that I re-discovered this recipe and decided to give it a shot.  You will NOT be disappointed.

1 package (8 ounces) cream cheese, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1-1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup fresh raspberries
1/2 cup vanilla or white chips

1. In a large bowl, beat the cream cheese and sugar until smooth.  Add eggs, beating well after each addition.  Stir in vanilla. Will be very thin.
2. Combine the flour, baking powder and salt in a separate bowl; add to cream cheese mixture just until blended.  Fold in raspberries and chips.
3.  Fill greased or paper-lined muffin cups two-thirds full.  bake at 375 for 20-25 minutes or until a toothpick comes out clean.  Cool for 5 minutes before removing from panto a wire rack.
