Fresh Salsa

I have recently become a huge fan of freshly made salsa.  The taste is so much better than anything you can buy pre-made in the store.  Another great thing about salsa is it is very flexible depending on your preferences and you'll see many people omitting or adding additional ingredients to make it their own.

This is my salsa recipe and it can be made two different ways:

Ingredients:
1 can diced tomatoes, pureed 
3 tomatoes, finely diced
1 small onion, finely diced
1/2 bunch of cilantro, leaves only, chopped
1 lime, juiced
1/2 tsp cumin
1/2 tsp ground red pepper
1 clove garlic minced
1 jalapeno pepper, diced
salt and pepper to taste


There are two ways of doing this recipe:

A)
Puree the canned tomatoes to create a paste-like base. Add all other ingredients and taste.  Add additional spices or ingredients if not to your liking.

B)
If you do not want anything from preservatives (i.e. canned) omit the canned tomatoes and increase the fresh tomatoes to 5-6. Add all other ingredients and taste.  Add additional spices or ingredients if not to your liking.

This batch makes enough for an party appetizer served with tortilla chips for approximately 12 people.
