Chocolate Chip Muffins

I made these a few weeks back to bring to school because I lost a bet with a few kids.  Anywho, they are delicious and incredibly easy to make.  I originally found the recipe on allrecipes.com but made a few modifications to make my own.  Be sure to apply the topping liberally as you should have plenty to go around.  My only regret was not making extra batch just for myself!

2 Cups all-purpose flour
1/2 Cup white sugar
3 tsp baking powder
1/2 tsp salt
1 Cup milk
1/3 Cup vegetable oil
1 egg
1 Tbsp vanilla extract
1 Cup semi-sweet chocolate chips

3 Tbsp white sugar
2 Tbsp brown sugar

1. Preheat oven to 400 degrees.  Lightly grease muffin tins or fill with liners.
2.  In a medium bowl, combine flour, sugar, baking powder, chocolate chips, and salt; mix well.  In mixing bowl (i.e. Kitchen Aid/stand mixer), combine milk, vanilla, oil and egg; blend well.  Add dry ingredients all at once; stir just until combined (batter will be lumpy).
3.  Fill cups 2/3 full.  Separately combine 3 Tbsp white sugar and 2 Tbsp brown sugar and sprinkle tops of muffins before baking.
4.  Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.  Cool 1 minute before removing from pan.  Serve warm.
